Another no-bake dessert that is now my new obsession! It amazes me how simple and tasty healthy desserts can be. You will be surprised at how natural, raw, ingredients can still satisfy those sweet cravings.
Ingredients (makes approx 30 bites):
Crust
- 1.5 cups rolled oats
- 1/2 full cup packed pitted dates (squish the dates in as much as possible)
- 1/2 cup shredded coconut
- 4 tablespoons coconut oil, melted
- 2 tablespoon maple syrup/honey
- 2 pinches of salt
Caramel Peanut Butter
- 2 cups pitted dates
- 1/2 cup peanut butter
- 4 table spoons non-diary milk
- 4 tablespoons coconut oil, melted
- 2 pinches of salt
Chocolate
- 25og melted dark chocolate
Method:
1. Line a loaf pan with baking paper.
2. Prepare the crust: pulse the oats in a blender or food processor until flour is formed. Add all other crust ingredients and pulse until mostly smooth texture is formed. Scoop the mixture out and press it into the bottom of the pan.
3. Prepare the caramel peanut butter layer: blend all ingredients until smooth. Spread the mixture over the crust layer.
4. Prepare the chocolate layer: boil 250ml of water in a small pot over the stove. Break up the dark chocolate in a glass bowl and place the bowl in the pot with boiling water. Let it melt and keep stirring until all the chocolate has melted. Pour and spread over the caramel layer.
5. Place the pan in the freezer to set (at least 1 hour, until top is firm).
6. Remove the pan and gently lift the baking paper to remove the bites. Use a knife to slice into bites and store in an airtight container in the fridge.
